I have been trying to
eat more healthy these days and starting using oat drink for my
coffee, smoothies...instead of milk. Here are some of my vegetable
foods this week.
Breakfast
Oat porridge with cinnamon, coconut sugar, topped with banana, persimmon and coconut flakes
Dark bread with peanut
butter, banana slices, coconut flakes
Lunch: Pasta with onion,
mushroom, cherry tomatoes sauce
Vegetarian spicy noodle
soup or bun bo hue chay. Despite the simple
look, it tastes very delicious. I made the broth with lots of onions,
pear, lemon grass, and spices for a long time to get the desired
flavours.
Snack: persimmon
Smoothie
Peanut butter smoothie:
banana, oat drink, peanut butter, cacao powder, coconut sugar
Green smoothie: mango,
papaya and pineapple mix, banana, spinach, oat drink, coconut water,
and a bit of dried moringa leaves.
